We tried these for lunch today. I LOVED them, and one out of my two bean-haters loved his, too. I will definitely torture my remaining die-hard bean hater by putting these in permanent lunch menu rotation! Maybe we will eventually win her over.
We didn't have mozzarella, so I subbed cheddar, and I thought it was fine. Also, I think I will try half the salt and garlic powder in the filling next time. I salted the outsides right when I took them out of the pan, and it ended up being a little much. I can definitely see these as a dinner main course served with sour cream and shredded lettuce, maybe a little fresh tomato..
