Cauliflower Soup

I am obsessed with this soup!  It is so easy to put together, and it is delicious!  I have made it twice this last month.  I think (correct me if I’m wrong) it would be easy to make it GF if you have a flour substitution you trust with which to make a nice roux.  cauliflower soup

If your kids don’t like cauliflower, you could puree it all for a creamy soup that they might like without knowing there’s cauliflower in it.  We love it chunky (in fact, I usually at least double up on the veggies) and we especially love it served with several dashes of chipotle-flavored Tabasco sauce on top!

Slow Cooker BBQ Pork

I got this recipe when I was in a freezer meal cooking club. Oh how I LOVE meals that are easy, can be prepped days, weeks or months before. It is even better when it is a crowd pleaser.

When pork is on sale I buy extra and through everything a gallon freezer bag, label and freeze.  On the day that I’m going to cook it I just cut open the bag and dump everything into the crock pot. If I put it in there completely frozen I usually add about an hour to the cooking time.

Garlic Parmesan Mashed Potatoes

 

I don’t usually make mashed potatoes. :/

Honestly when I have made mashed potatoes I’ve used the Idahoan (dehydrated) mashed potatoes.  Always roasted garlic, four cheese or butter and herb because I don’t really know how to make gravy. 

I’m not so sure why I’ve been so hesitant to make them. They really aren’t that hard. I’ve watched my mother-in-law make the most delicious mashed potatoes and gravy several times now. She always uses a hand mixer and they turn out so smooth with little effort! So I decided to give it this recipe a try! Super yummy and SO easy!

One day I’ll give gravy a try. ;)

Smothered Bean and Rice Burritos

 

I REALLY like this dish!

Do you have a favorite salsa? Do you think using different bands change the over all flavor?

My new favorite is the Great Value picante sauce (mild) from Wal-mart. I love the flavor and think it goes really well with this meal. 

If you have leftover refried beans or rice this is a great recipe to use them up.

Pizza- Deep Dish & Quick and Easy Gluten Free

 

We like to do pizza and movie night every Friday night!

I think homemade pizza is better then anything else. (Although I would never turn down the other stuff.)  About 5 years ago I found Crystal at everydayfoodstorage.net  Her 30 minute homemade pizza dough recipe has been our favorite ever since the first time I made it.

We MISS Crystals recipe and have struggled to find a good substitute.  About a month ago we found one! I think it will be our new GF favorite! Premium gold makes a good  ‘Gluten Free Flax & Ancient Grains All-purpose Flour’ you can buy it off their website or at Costco. I’m excited to try more of their recipes!

I’m on a little black bean kick. Every recipe I come across with beans in it I have the need to try it. I can’t help myself I must make them!

I’ve made these several times (THREE times this week), and have NOT once followed the recipe.

I’m not sure why I made this recipe card with the same instructions found on the original recipe from Natasha's Kitchen.  But because I made it I’m going to give it to you. You can follow it.

Baked Cream Cheese Spaghetti

 

I LOOOVE spaghetti!

I could probably eat it at least three times a week.

I’ll eat it ANY way! Quick and easy from a jar (or can), from scratch, from a restaurant, or from any loving person that wants to make it for me. WINK WINK 

This is one of our favorite ways to eat spaghetti.

Before we were Gluten Free I made this with whole wheat pasta. Now I like to make this with a corn and rice blend. You can use 100% rice but I think it gets a little mushy.

Crispy Southwest Chicken Wraps

 

WOW the last couple of months have been a whirlwind, we are looking for a new home FOUR hours away from our current one! I never thought buying a house would be so exciting and discouraging all at the same time. There is not a lot of homes on the market where we are moving and when they do, if they are decent they sell with in a few days.

My sweet hubby has been living in a hotel and traveling back and fourth. My sweet little children and I spent the last two weeks with him. It was a lot of fun with three kids in a small motel room. I think the best part was …..um…..ok it really wasn’t that fun. (Don’t get me wrong we did have fun but it was really crazy!)

One thing that I did was cook dinner with only a microwave and a electric skillet. Does that make me a SUPPER MOM?!

I think it does!  ;)

I love these crispy southwest chicken wraps! They are really easy to make (even in a motel, with the right equipment)!

I used to make them with flour tortillas but now that we eat gluten free I use corn tortillas and make quesadillas. My kids eat them up!

Foolproof Oven-Baked Brown Rice

 
Using brown rice makes me feel like I’m feeding my family healthy food. I made rice on the stove ONE time and it turned out to be a disaster! After that mess I used Brown Minute rice because it was quick and easy. Then I got a pressure cooker which I love but I never could get the rice to water ratio right.
Then I found this recipe at Our Best Bites and I don't think I will ever go back to any other method.
I have made it about a hundred times in the last couple months and it comes out perfect every time!

Rice Crispy Treats

I was watching the pioneer woman on Amazon Prime a while back. Ree made these yummy rice crispy treats! They looked so good I had to make them for my sweet husband for valentines day. He had a long drive back to Arizona that weekend and he eat about half of what I sent him. They are THAT good! Honestly I’ve been making them about every week since and eating the whole thing my self. Gasp… my waistline isn't really happy about this!
Talking about Ree Drummond. I just love her! I love her tv show, her blog, her house, her lodge, her wide open spaces and Isn’t she the sweetest person. She has my dream life. It seems simple yet perfect. A big cattle ranch that my husband can work on and a big kitchen that I can make delicious food in. I mean who wouldn’t love a big open kitchen that fits all of the needed/wanted kitchen gadgets. Counter space to actual have more than one cook in the kitchen. Not to mention the acres and acres of land for their kids to explore?  
I don’t get to have my dream house just yet, with all the room that I fantasize about. But I can feed my family delicious, healthy, and “Sweet and Saucy” food! Even if it is in a small kitchen, in a small house with a small yard.
