Smothered Bean and Rice Burritos

 

I REALLY like this dish!

Do you have a favorite salsa? Do you think using different bands change the over all flavor?

hum…….

My new favorite is the Great Value picante sauce (mild) from Wal-mart. I love the flavor and think it goes really well with this meal. 

If you have leftover refried beans or rice this is a great recipe to use them up.

Baked Beans

I was hosting a few guests, including my Mother In Law, recently for a birthday party.  Because cooking for her makes me nervous, and because I was short on time, I decided to keep it simple and I made (ahead!) my ham & swiss sliders and these baked beans.  Both were a smashing success, so I thought I would share the recipe here.  It’s a recipe I’ve been making for probably 15 years, and I don’t even remember where it came from, but even my bean-hating kids love these beans!

I’m on a little black bean kick. Every recipe I come across with beans in it I have the need to try it. I can’t help myself I must make them!

This is a great quick and easy lunch or dinner.

Black Bean Soup

 

I don’t know what it is about this soup but we LOVE it!

It is pretty cheap, extremely easy and supper yummy!

It is one of the meals that I make for my sweet husband every week for him to take on the road.

It uses Bush’s seasoned Black Beans. I have found it in Wal-mart and Smith’s, not every store carries it.  One day I’m going to try and recreate it but for now $.89a can at Wal-mart isn’t that bad.

I like to serve this with the oven-baked brown rice.

Crispy Southwest Chicken Wraps

 

WOW the last couple of months have been a whirlwind, we are looking for a new home FOUR hours away from our current one! I never thought buying a house would be so exciting and discouraging all at the same time. There is not a lot of homes on the market where we are moving and when they do, if they are decent they sell with in a few days.

My sweet hubby has been living in a hotel and traveling back and fourth. My sweet little children and I spent the last two weeks with him. It was a lot of fun with three kids in a small motel room. I think the best part was …..um…..ok it really wasn’t that fun. (Don’t get me wrong we did have fun but it was really crazy!)

One thing that I did was cook dinner with only a microwave and a electric skillet. Does that make me a SUPPER MOM?!

I think it does!  ;)

I love these crispy southwest chicken wraps! They are really easy to make (even in a motel, with the right equipment)!

I used to make them with flour tortillas but now that we eat gluten free I use corn tortillas and make quesadillas. My kids eat them up!

White Bean, Bacon, & Spinach Soup

I just barely tried this recipe and had to share it because it was SO GOOD!  I think it would also be good with some Italian sausage or turkey sausage added in if you have a family that needs a little extra protein to call it a meal.  Or you could leave out the bacon and use tomato stock instead of the chicken stock if you wanted to make it vegetarian.  white bean spinach & bacon soupRecipe & Photo courtesy Cinnamon Spice & Everything Nice
I made a few slight modifications from the original, simply using what I had (canned tomatoes, bacon bits, and minced garlic) on hand rather than making a trip to the grocery store for fresh tomatoes, sliced bacon, or whole garlic cloves. I also purposefully didn’t puree it because I personally prefer a stew-y soup to a pureed one.

White Bean Chicken Chili

“We are not a chili family”. 

It’s sort of a motto around here.  I’ve tried a lot of different chili recipes, and I’ve never tasted a single one I liked.  Except this one, and that doesn’t count because it’s nothing like traditional “chili” because it uses white beans.  It’s a great way to use up your food storage dried beans!  - white bean chicken chili recipe card

I usually leave the sour cream out of the pot and instead just garnish each bowl with a small dollop, mostly because I like the chili as much without it as I do with (and I don’t need the extra calories).  The kids like theirs with sour cream, though, so they get a nice little dollop on their bowls.
